MAIN INGREDIENTS: hand-pulled alkaline noodles (wheat), leeks, chili flakes, scallions.

HISTORY: this noodle dish is finished by pouring hot oil over dry seasoning atop the noodles, resulting in a delectable sizzle. The technique dates back to over 3000 years ago, during the Zhou Dynasty. The hand-pulled variety of noodles are traced back to the Yuan Dynasty.
